Grilled Brioche with Brie, Dark Chocolate and Blueberries is amazing for dessert or brunch!

Dessert grilled cheese? Yes, I’m going there. I’ve teamed up with Wisconsin cheese as a Grilled Cheese Insider for their 2015 Grilled Cheese Recipe Showdown. When they asked me to create a recipe, my mind immediately went to dessert and and the combination of Wisconsin brie, blueberries, bittersweet chocolate and French brioche. You’re going to love this.

This grilled cheese can get a bit messy so I recommend enjoying it with a fork and knife (though I did manage to cut it in half and pick it up for the photos). If for some reason you can’t find brioche, challah is an excellent substitute.

I used a 60% bittersweet chocolate but this would also be wonderful with a darker chocolate or a milk chocolate! The chocolate doesn’t need to melt completely into the sandwich; in fact, it’s better if it stays slightly solid in the middle while melted around the outside. It will give the grilled cheese a nice bite.
Grilled Brioche with Brie, Dark Chocolate and Blueberries
Grilled Brioche with Brie, Dark Chocolate and Blueberries is amazing for dessert or brunch! Serve this decadent treat for your next special occasion.
- 1/2 cup blueberries
- 1 teaspoon confectioners’ sugar, (plus more for dusting)
- 1-2 tablespoons unsalted butter, (softened)
- 2 slices brioche
- 3 1/2 – 4 ounces brie cheese
- 2 ounces bittersweet chocolate
- Place the blueberries in a small nonstick skillet over medium heat. Swirl the pan periodically as the berries become darker in color and the juices begin to release, approximately 5-6 minutes. Remove from the heat and use a potato masher to mash the blueberries and make a compote. Stir in the confectioners’ sugar.
- Heat a large skillet over medium or medium low heat (use medium low if you don’t want to rush building the grilled cheese). Butter both sides of the brioche and once the pan is hot, lay both slices down in the pan. Once they’re golden brown, flip them over. While the other sides brown, carefully layer the brie on top of one slice and place the chocolate on top of the brie. Spoon the blueberry compote on top of the chocolate. When the bottoms of the brioche are golden brown, place the plain slice on top to finish building the sandwich.
- Dust with additional confectioners’ sugar and serve immediately.
